Group Executive Chef
Executive Chef Jinu Abraham has been redefining dining experiences since 2008, recognised locally and internationally for his passionate and innovative approach to creating memorable menus.
Seeking out exceptional produce and partnering with local suppliers is a signature aspect of Jinu’s approach, along with his dedication to designing healthy options spanning gluten-free, low carb, vegan and plant-based dishes at all meal sittings.
Beyond the kitchen, Jinu dedicates his time and skills to many charitable organisations, judging regional and national culinary competitions, and sitting on advisory boards for higher learning institutes in a commitment to the next generation of notable chefs.
Head Chef Darren Smith is a quintessentially-passionate Otago local, with an extensive career working in many of the South Island’s most highly regarded restaurants, pubs and cafes, as well as most recently working as a private chef.
Taking the very best of the region’s produce and creating menus that surprise and delight with every mouthful is Darren’s approach to cuisine.
